Horseradish-Tomato Vinaigrette

Ingredients

1/2 Tbls.Prepared horseradish

1/2 Tbls. Honey

1 Oz.Vinegar, rice wine

4 Oz. Roma tomatoes, peeled and seeded, fresh

1/4 Oz. Tomato paste, canned

4 Oz. Olive oil1

4 Tsp.Tarragon, fresh

14 Tsp.Black peppercorns, fresh

1 Tsp.Dijon mustard

Instructions

Combine horseradish, honey, vinegar, tomatoes, tomato paste, Dijon mustard and black peppercorns in a blender. Blend until smooth. While blender is running, add oil in a thin steady stream until well mixed and thick. Cover and leave at room temperature.
