Eye Opener Eggs

Number of Servings: 2

4 Extra large eggs
2 Tbsp. Cream or 1/2 and 1/2 per egg
1 Tsp. Prepared horseradish per egg
1/4 Red bell pepper, chopped fairly fine
Salt and pepper to taste

Take first 3 ingredients and mix well. Add red pepper and fold in. Heat skillet with a bit of oil (we use bacon fat), and fry gently or till eggs are done to a consistency you like.
